Freezer Cooking



So freezer cooking at 8 months pregnant = no fun.  The whole process of planning and picking the recipes, actually going grocery shopping, and then preparing the meals took about 3 days.  It would have taken less time but when we went to go shopping on Saturday the shelves were pretty much bare.  Who knew that a little snow storm would cause people to freak out and buy out the entire bread section?  With that being said, I’m very glad that we have those meals ready for use when we bring Little T home.  Which apparently is going to be soon based on my doctor :)  So, without further adieu, here’s my process.

I started off by looking for recipes for freezer cooking.  Let me say that they all seemed a little repetitive.  There was a lot of mexican and italian inspired meals and I struggled to find some that were different.  But I eventually did and I put them all on this idea sheet

fc 1When I had finished picking out recipes, I wrote them on another sheet that had a space for any notes about the recipe and where it was located, which for me was on Evernote.

fc 2After this list, I decided on the prep order and put it on another list.  Apparently I love lists :)

We went to get our groceries and this is what we came up with

fc 5And then it was time to put it all together.  I didn’t get any pictures of this because once we got started, it would have been hard for me to stop and take pictures every 5 minutes.

Overall, I don’t think I would attempt freezer again.  Maybe it was because I’m 8 months pregnant, but it was a lot of work.  I know I’ll be grateful when it finally comes time to use them but I don’t think this will become my norm for cooking.

My Adventures in Meal Planning

I figured since I’m trying to organize my life in anticipation of Little T, my meal planning could use some organizing as well.  I was looking online to see if I could fine an example that would fit our lifestyle and I came across this from Simple Mom.  It is a simple 2 week rotation of meals entered into a google calendar.  I started off writing down all the meals that we usually eat and then I wrote down all the ingredients that go with that particular recipe.

I decided to put some of our usual meals onto my calendar and shared it with my husband.  You can see what meals I planned here here.  I think this will work for us because we like to keep things pretty simple and that is exactly what this method was.  I also have a grocery list that you can find here

A Look At Our Thanksgiving Weekend

Well, I tried to take some pictures this weekend as I progressed through my recipe list.  I got several and then I got into the throes of cooking and just plain forgot.  But I thought I would share what I did have so here we go

Apples and snickers for, what else, apple snicker salad.  It was fantastic :)

The beginnings of what was to become an amazing peanut butter chocolate pie.  Heres the link.  Seriously, it was amazing!

And of course we put up our Christmas Tree.  This is my favorite part of the weekend.  We turned on Elf and my little sister helped as much as she could.  I would say that this is the only way to end the Thanksgiving weekend.

This is 1 of 2 things that I am most thankful for this year.  Number 1 being my husband and number 2 being this little guy.  I can’t wait to meet him in March!  I hope you all had a great Thanksgiving weekend.  Mine was exactly what I needed.

Seeing Green

No, this post isn’t about money or envy, it’s about finally seeing some green in my garden!  I planted beans, tomatoes, watermelons, and peppers.  So far my beans and watermelons have popped through!

1 bean.  I planted a row of beans that all have come through, but this one looks the best so it gets its 15 minutes of fame.

I only planted 2 watermelon seeds because even though the seed packet said it was ideal for small gardens, I’m not sure how small their small is and I wanted to be safe.  Hopefully the tomatoes and peppers will come through soon too!

New Dishes!

So for about 3 years now, my husband and I have been eating off of plates with fruit on them.  They are actually kind of cute but they wouldn’t look good with say an Easter or Christmas dinner served on them.  As one of our wedding presents, my mother in law offered to buy us some nicer plates and serving items.  While she was down helping us move in last weekend, we had some extra time so we packed up the car and we were off in search of dishes.  It didn’t take us long to find some we liked.  I thought I would take some pictures to show you what they look like.  They are kind of almost vintage/antique looking which I love!

I think I’m going to put flowers in this.

And I’m going to put a big fat turkey on this for Thanksgiving!

I bought some fresh raspberries from the farmers market this past weekend and I thought they would look great in a white bowl.  I love the contrast in color.

I thought I would throw in a black and white just for fun!
